I dreamt about this soup and I had to have it. A thick minestrone-style soup with tofu ricotta stuffed tortellini bobbing around. It was exactly as I dreamt it, so good. A. little weird for summer but maybe you have a cool night? Or save this for fall. I personally like to eat soup in all weather, there’s never a bad time for soup.
i will admit off the bat that this took a good chunk of my day to make. that being said, you could shortcut several parts of this. i used 2 sauces, a creamy cauliflower and a cashew sundried tomato. also, have you had lasagna with fresh pasta? have i mentioned that i’m a nanny? well it’s true. when i’m at work i have to make lunch FAST SO FAST before the baby wakes up and use as few pots as possible but also make something tasty and filling. i made this orzo the other day and i was really surprised by HOW good it was, considering how thrown together it was. i recommend it.
