ok so maybe this is boring, but here’s another easy soba-veg-broth bowl. why? because i’ve been eating some variation of this at least a few times a week. it’s great for fridge clearing, quick, easy, warm tasty soup times that will fill you up.
this is my white person hippy ramen and it hit the spot! it’s good for cold days when you feel like you need some clean veg stuff but you want it to taste really good. our garden produced one tiny delicata squash so i used that, but if you have a regular one, you’ll probably only use 1/3 of it.
I’ve been wanting to mess around with zucchini noodles for sometime and i’m glad i finally did. they are delicious and you can use them in lieu of pasta or soba or anything noodly. I topped them with mushrooms, radish, broccoli, tofu, basil, scallions and a warm almond broth and it was everything i dreamt it would be.
i will admit off the bat that this took a good chunk of my day to make. that being said, you could shortcut several parts of this. i used 2 sauces, a creamy cauliflower and a cashew sundried tomato. also, have you had lasagna with fresh pasta? i’ve been on a pasta making kick. why? because it’s easy! it’s really actually easy. time consuming? yes. hard? no way. this ravioli dish was worth the time it takes.
