I dreamt about this soup and I had to have it. A thick minestrone-style soup with tofu ricotta stuffed tortellini bobbing around. It was exactly as I dreamt it, so good. A. little weird for summer but maybe you have a cool night? Or save this for fall. I personally like to eat soup in all weather, there’s never a bad time for soup.
I’ve been wanting to mess around with zucchini noodles for sometime and i’m glad i finally did. they are delicious and you can use them in lieu of pasta or soba or anything noodly. I topped them with mushrooms, radish, broccoli, tofu, basil, scallions and a warm almond broth and it was everything i dreamt it would be.
so this recipe is an oddity for this blog, it’s a pepper soup. have you ever noticed that i don’t use peppers? ever? in anything? well its true and it’s because i just don’t really like them. poblanos seem to be an exception to my pepper-gross-out rule. SO HERE YOU GO. it’s a really subtle soup but has great flavour.
