for the rest of this month i have decided to only post COOKIES or COCKTAILS. because it’s close to christmas and that’s what i want to be eating and drinking.

so here’s the first cocktail, a fizzy pineapple cocktail with rum and fresh basil!

PINEAPPLE RUM + BASIL

i juiced a fresh pineapple and it was delicious. if that’s too crazy for you, then just get the freshest unprocessed juice you can find.

• pineapple juice
• fresh basil (sweet or thai)
• spiced rum (kraken is my go to)
• lime
• ice
• club soda

in a large glass, muddle 10 basil leaves with lime juice (1/4 lime per drink). add 3 shots of pineapple juice, 2 shots of rum (or 1 if you want to take it easy), add ice and top up with soda.
