of all the gazillion cookies i made this month, these were among my favourite.
adapted from martha stewart’s cookie book
CREAM CHEESE WALNUT COOKIES
- 4 c. flour
- 4 sticks earth balance
- 6 oz vegan cream cheese (most containers are 8 oz if that helps your life)
- 1 1/4 . sugar
- 1 tbsp vanilla
- 2 1/2 c. walnuts (1 1/2 c. toasted and chopped, 1 c. untoasted and finely chopped)
cream earth balance with cream cheese until fluffy. add sugar, vanilla and combine. add flour and toasted nuts, mix until just combined. roll into two 2 inch diameter logs and wrap in parchment. chill until firm, at least an hour.
preheat oven to 350. roll cookie logs in the finely chopped nuts, pressing slightly so they stick. cut into 1/4 inch slices and bake on parchment lined baking sheets for 18-20 minutes.
