these cookies are so good, the perfect chocolate chip cookie to make all your cookie dreams come true.
ok maybe that’s an exaggerated claim but they are really good! also wholewheat and made with coconut oil so sort of healthy-ish.
THE COOKIES
- 1/4 c. coconut oil (you don’t need to melt it)
- 1/4 c. earth balance
- 2/3 c. brown sugar
- 1 tsp ground chia or flax with 2 tbsp water
- 1/2 tsp vanilla
- 1 1/4 c. whole wheat flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- chocolate chips, i won’t give an amount because you are your own chocolate chip boss (i used 1/3 c.)
- pinch of salt
whip the fats until creamy then add the sugar and remaining wet ingredients until well incorporated and fluffy. mix the dry ingredients then add to the wet mix. stir it all up until evenly mixed. it might look a little bit dry because it’s all whole wheaty and it takes a bit more for the fat to get in there. use your hands to bring the dough together and fold in the chocolate. if it still seems dry just add a tbsp of almond milk.
let to dough sit in the fridge for a couple hours. start the dough before dinner then you are all set up for a nighttime treat.
preheat oven to 350. roll dough into golfball sized balls and bake with a couple inches in between them. bake for 10 minutes! now: they may seem soft and you might think they should cook more. unless they are light and raw in the centre GO AGAINST YOUR INSTINCTS. take them out and let them cool on the sheet. they’ll set up quickly and this will give you a delicious chewy cookie. once firm enough to move, cool on a wire rack or just eat them immediately like we did.
