soba noodles in soup w/ delicata, kale and tofu
this is my white person hippy ramen and it hit the spot! it’s good for cold days when you feel like you need some clean veg stuff but you want it to taste really good. our garden produced one tiny delicata squash so i used that, but if you have a regular one, you’ll probably only use 1/3 of it.

again this is from Fuchsia Dunlop’s Every Grain of Rice (surprise!). I did some vegan tweaks on it, but i take little to no credit here.
summer panzanella with peaches, white beans + kale
pan! za! nella! this stuff is so good, who hasn’t been looking for a reason to eat chunks of bread in their salad? this is such a nice summer salad, filling enough to be a meal with lots of flavour. this makes a salad for 2 people-ish.
BBQ PIZZAS w/ pesto, chard, king oyster mushrooms, cashew ricotta + everything else
cooking pizzas on the BBQ is my new favourite thing. put a stone on there, crank it up and close the lid and then VOILA pizza oven! it gets insanely hot and makes the best pizza, with a slight grilled smokey taste.
