summer panzanella with peaches, white beans + kale

pan! za! nella! this stuff is so good, who hasn’t been looking for a reason to eat chunks of bread in their salad? this is such a nice summer salad, filling enough to be a meal with lots of flavour. this makes a salad for 2 people-ish.



  • 1 ripe peach, diced
  • 2 c. cherry tomatoes, quartered
  • 5 medium leaves of lacinato kale
  • 1 small can cannelini beans, rinsed and drained
  • 1 handful fresh basil, cut into a chiffonade
  • 2 c. dry bread torn into bite-sized pieces (or a bit bigger)
  • 2 tbsp capers


  • 1 tbsp dijon mustard
  • 1/3 c. olive oil
  • 3  tbsp white wine vinegar
  • a big pinch nutritional yeast
  • 1 tsp agave
  • pinch of sea salt + chili flakes
  • lots of black pepper
