pan! za! nella! this stuff is so good, who hasn’t been looking for a reason to eat chunks of bread in their salad? this is such a nice summer salad, filling enough to be a meal with lots of flavour. this makes a salad for 2 people-ish.
SALAD
- 1 ripe peach, diced
- 2 c. cherry tomatoes, quartered
- 5 medium leaves of lacinato kale
- 1 small can cannelini beans, rinsed and drained
- 1 handful fresh basil, cut into a chiffonade
- 2 c. dry bread torn into bite-sized pieces (or a bit bigger)
- 2 tbsp capers
DRESSING
- 1 tbsp dijon mustard
- 1/3 c. olive oil
- 3 tbsp white wine vinegar
- a big pinch nutritional yeast
- 1 tsp agave
- pinch of sea salt + chili flakes
- lots of black pepper
