a nice tasty tiny cookie.
- 1 c. earth balance, softened
- 3/4 c. sugar
- 1 tsp vanilla
- 2 1/2 c. flour
- 1 big tbsp rosemary, chopped fine
- sanding sugar for rolling
cream earth balance and sugar until fluffy. add vanilla and rosemary and mix for another bit. add flour and mix until just combined. roll into 2 logs, about 1 1/2 inches in diameter and wrap in parchment. chill for at least an hour. preheat oven to 375, roll cookies in sugar, then slice cookies 1/4 inch thick. bake on parchment lined baking sheets, about an inch apart for 18 minutes. keep an eye! they go from being almost golden to too golden right at the end.
