Happy New Year!!
l’m happy to start it off with a new cookbook and a new bowl. First task? Cook something delicious to fill it up. Near & Far is the newest cookbook from 101cookbooks (a go-to of mine). The first thing that struck my fancy was dumplings, big surprise.
They turned out beautifully, with lots of spinach and coconut milk to add to the mix.
DUMPLINGS
- 1/3 c. chinese chives
- 2c. cooked split peas
- 1 c. packed spinach
- 1/2 c. coconut milk
- great big pinch of salt
- 1 big minced clove of garlic
- wonton wrappers
- oil
There is also a chive oil in the book but I’ll leave that aside for now.
In a food processor pulse the peas the add coconut milk to make a nice smooth texture. add garlic, salt, chives and spinach. whizz it up and add more coconut milk if needed.
Fill your wontons and shape into dumplings. heat oil in a pan and add the dumplings until golden on the bottom. add 1/3 c. water, cover and steam for a couple minutes. remove lid and let any excess liquid evaporate. SERVE EM UP!!!
Aren’t these dumplings ever so gorgeous? I love how the colour of the filling shows through the wrappers. Not to mention that the filling sounds incredible… I used to follow 101cookbooks but it’s been a while, and I never realized that she had a cookbook (cookbooks? from the sounds of it) out!
thank you! yes she has several books now i think! they are beautiful. i froze some of these badboys, highly recommend it!
Hello,
I stumbled upon your blog and it’s quite lovely. I was wondering where you can buy eggless wonton wrappers in Vancouver?
Kindly,
Sarah
Hi Sarah! The kind I usually get are made by Double Happiness Brand. For some reason it seems that the square shape are often eggy and the round shape are eggless (across brands). I get them at Sunrise in Chinatown but Donald’s also carries them
