these are cookies my mum makes that i have taken under my vegan wing. i’m sure the recipe is from somewhere, so i stake no claim to writing it, only to adapting it, BUT i also can’t give credit where credit is due. sorry cookieworld. but THEY BOY ARE THEY TASTY
COOKIES + COCKTAILS #1 pineapple rum basil
for the rest of this month i have decided to only post COOKIES or COCKTAILS. because it’s close to christmas and that’s what i want to be eating and drinking.
so here’s the first cocktail, a fizzy pineapple cocktail with rum and fresh basil!
wild rice with delicata, pomegranate + chickpeas
winter feast! well, one dish. BUT it’s jam-packed. works great for lunches or leftovers or potlucks and things. i made this in stages over a half day so i could eat something at work later on. admission: the sauce is pretty much just a thin gravy. just try it! pretty easy stuff.
stuffed breakfast squash
this was a real gamble. i wanted to stuff and bake something, mark wanted a scramble, i looked in the fridge and went with it.
luckily it turned out to be SO DELICIOUS. i will make this again and i think you should too. it’s a nice new take on brunch, not just the same scramble and gravy (not that i don’t love scramble and gravy).
