Since going back to work I’ve been eating this EVERY DAY and I honestly am still not sick of it. It is not fancy, not difficult and to be perfectly honest, I eat it cold out of a plastic container at my bus stop. See? Very umglamorous.
You can change the nuts and fruit to keep things interesting. I make 3 days worth at a time, and by the 3rd day it’s still good! I haven’t tried longer than this. This recipe is per portion.
- 1/2 c. organic rolled oats
- 1 tsp hemp seeds
- 1 tsp chia seeds
- 1 tsp Udo oil (or whatever omega oil you like)
- a big heaping spoonful of coconut yogurt
- 1/2 c. – 2/3 c. unsweetened plant milk
- 4 walnuts, chopped
- a few tbsp dried cherries
Toss it all in your container, give it a stir and pop them in the fridge overnight (or over several nights). I generally make it exactly like this but I have added a dollop of apple sauce, frozen blueberries or a tbsp of tahini to this mix. It’s very adaptable.
As you can see in my very fancy photo, I prep a couple days of smoothies for the baby at the same time (same seeds, udo oil, a little tbsp of oats, walnuts, banana, blueberries, steamed greens and tahini).
