i consider myself to be an expert on very few things, but guacamole, i know my stuff.

i had a ton of avocados left over from the big brunch that didn’t ripen in time, and i needed a beach snack but was in a rush. GUACAMOLE SAVES THE DAY.

THE GUACAMOLE

4 ripe avocados

the zest of 1 lime

the juice of 1/2-1 lime (to taste, i tend to use the almost the whole thing)

4 large cloves of garlic, minced fine or grated

a big pinch of salt

tons of black pepper

a handful of chopped cilantro

* EXTRAS/IDEAS (sometimes i change it up)

diced tomatoes

1 tsp chili paste

handful chopped parsley

1/2 jalapeno, mostly seeded and diced fine

roasted garlic (in addition to the fresh)

red onion diced fine

Put it all in a bowl and mash it with a fork until it’s the way you like it to be. if you aren’t finishing it and want to store it, squeeze some lime or lemon juice over the surface, cover it with plastic wrap (or whatever) and refrigerate.

the chips are just cut up flour tortillas that i had in the house that were a big mangled (the cat ate half of them), and toasted them on a pan at 350 until they crisped. EASY STUFF.

*For the beach edition of this guac i used NO cilantro, but did use parsley, diced cherry tomatoes and some chili paste and a bit of extra zest. it was soooo tasty.

thor is my cat and on sunday he turned 8 years old.  we usually have some sort of party for him which is just an excuse to make a big food thing and drink and put a tie on the cat.

this year i made it a secret restaurant/birthday combo and did a 25 person brunch. it was sort of insane, but also really not very hard. somehow. it was a sit-where-you-want casual deal which cut down on some of the stress of such a big undertaking.  i managed to get the portions right on all of it except for the tofu scramble which i made WAY TOO MUCH OF and have been eating in various incarnations since.

THE MENU

here’s a recipe:

TOFU SCRAMBLE

oil

2 blocks organic tofu (medium firm if you can find it, otherwise pressed or firm is fine)

1 red onion

1 tbsp tumeric

1 tbsp curry powder

1 tsp coriander seeds

1 tsp chili flakes

1 c. broth

5 cloves garlic, minced

1/4 c. nutritional yeast

10 cherry tomatoes

2 big handfuls arugula

1 big bunch of parsley, chopped

salt and lots of black pepper

Sautee onion in oil, then add spices and stir it all around until it’s fragrant. Crumble the tofu in to the pan and fry up a bit. once it has some colour, or if it starts sticking, add broth and allow it cook down and absorb. toss in nutritional yeast, garlic and tomatoes. at this point it should have dried up and the yeast will absorb what’s left and you could cook it a tiny bit more.  season with salt and pepper and stir in parsley and arugula. serve.

here is what i did with it for my after work dinner:

scramble with avocado, roasted cherry tomatoes, sauerkraut, hummus, black olives, arugula salad. TASTY.

yes, popcorn.

tonight i came home from work to find my house ENTIRELY EMPTY. and as much as i like hanging out and seeing everyone, when i walked in it was so quiet and still that i decided to take advantage of it and make popcorn and watch a movie all by myself.

so far so good. a recipe for popcorn seem silly? WHATEVER, IT’S GOOD.

 

 

POPCORN WITH CURRY AND SMOKED SALT

coconut oil

popcorn kernels

nutritional yeast

smoked salt (or porcini salt or any fancy salt, or just sea salt)

curry powder

black pepper

olive oil

 

heat up a heaping tbsp of coconut oil in a pot, and put in 3 kernels and put a lid on it. turn to medium heat and wait until you start to hear popping, then add a layer of kernels (it always makes more than you think it will, seemingly). Put to lid on and shake the pot around until the popping slows down. Toss in a bowl with olive oil, a big handful of nutritional yeast, a couple tsp of curry powder, one or two big pinches of salt, and lots of black pepper. keep drizzling oil and tossing it while you sprinkle the dry stuff. ALL DONE.
