with the help of our very neighbourly neighbours, the garden is ready to go! after getting 6 cubic yards of soil and hauling it around our new raised beds are full and the old beds and topped up and looking fresh.
now i can finally start transplanting my seedlings, many more updates to come.
if you ever wondered what 6 cubic yards looks like
also SNACKING! i am snackier everyday. my hunger knows no bounds. here is some tasty and quick snacks i’ve been snacking
AVOCADO + RADISH SNACK
- 2 ryvita crackers (crisp rye crackers, but you can use any tasty cracker or flatbread)
- 1/2 avocado
- 1 radish, sliced as thin as you can
- flakey smoked salt
- black pepper
mush the avocado on the crackers, top with radish then sprinkle generously with salt and a few good cracks of black pepper.
SUPER QUICK MISO
ok so more of a small meal, but when you hunger as i do, it’s a snack. also if you’re getting sick or you’re hungover, it’s magic.
- a tbsp oil
- a 1/2 slice of medium firm tofu, cubed
- 1 leaf of kale
- 1 fat scallion
- 1 tsp grated ginger
- 1 clove garlic, minced
- 2 c. water
- 3-4 tbsp miso paste
- 1 tsp black vinegar
- 1 tsp braggs or tamari
heat oil in a pot, pat tofu dry and fry until browned. add garlic and ginger and stir for a minute then add water. scrape up any tofu bits from the bottom of the pot. add kale and white parts of the scallions and heat until just under boiling (and kale is softened). mix a scoop of the soup with the miso paste in a separate bowl until smooth then take the soup off the heat and add the miso. season with black vinegar and bragg’s and top with green bits of the scallions.
