this is great for early mornings when you are too tired/busy/lazy to eat properly. I love eating as much as possible, but on early early mornings it isn’t a priority. you prep this the night before and then eat it when you wake up! no heating, no anything.
aside from the oats and milk, you can use any dried fruits, nuts or seeds you like/have handy. serves 1.
- 3/4 c. thick cut rolled oats
- 1 c. soy or nut milk
- 1/2 tsp apple cider vinegar
- 2 tsp each: hemp seeds, chia seeds
- 1 tbsp sunflower seeds
- 1/4 almonds
- 3 tbsp raisins
- a few dried cherries, chopped
- a few dried apricots, chopped
mix it all together. cover and place in the fridge overnight. take it out of the fridge when you wake up and eat it when you get around to it! you can add fresh fruit, grated apple or berries.
